Celebrate the season through the rich traditions of Mexican holiday cooking. In this hands-on course, you'll learn to make masa from scratch and explore its deep cultural roots, along with its essential role in tamales, tortillas, and more. We'll highlight festive variations on classic fillings and prepare champurrado-a warm, spiced chocolate drink traditionally served with tamales during the holidays. Come ready to cook, taste, and share in the flavors of a Mexican holiday table.

Notes:

Please wear long hair pulled back, long loose pants and sleeves, and closed-toe shoes. Arrive through the east doors to the Lobby of the Institute for the Culinary Arts (Building 22 of MCC's Fort Omaha Campus) 15 minutes before class starts.
