Join Chef Peter Walsh via Zoom as he shares age-old canning secrets including the selection and use of essential equipment and variations on simple pickle, jam/preserves, and salsa recipes. Learn basic vegetable and fruit preparation, techniques for enhancing flavor and retaining color, and the safest methods for preservation. You can cook along with Chef, displaying your work via video camera and receiving immediate feedback. The result will be a few jars of your own goodies to store and enjoy in the coming months, as well as the confidence and techniques needed to preserve the garden bounty to be had as the gardening season progresses.


A mandatory $20 supply/ingredient kit fee is due at time of registration. Students must provide their own kitchen equipment. Ingredient kits will be available for pick-up at the MCC Fort Omaha campus. Pick up information will be sent to students via email prior to the class start date. Must be 16 or older.

Students will utilize the Zoom conferencing application to complete this course. Zoom meeting invitations will be sent via email at least one day prior to the class start date. Students must provide a valid email address to receive the meeting invitation to enter the Zoom virtual classroom. To view/update your email address, visit and log on to your "Existing Account". After you log on, you will be taken to your "My Account" page. Once the page loads, click on "Profile." You can update your email address and any other information on your "Profile" page. If you make any changes to your information, make sure to scroll down to the bottom of the page and click "Update Account" to save your changes.
