Join Chef Brian O'Malley via Zoom as he takes you through the process of creating cozy, delicious French Onion soup from our kitchen to yours. Learn to cut and caramelize onions, toast perfect baguette slices and assemble this classic French dish for four people, along with a simple salad to complete your meal. You can show Chef your work via camera and get his feedback on your work. Finally, pour your favorite beverage and sit down to enjoy the fruits of your labor, all from the comfort and safety of your home kitchen. Must be 16 or older to enroll. Student must supply their own ingredients, cookware and serviceware.

SUPPLY LIST:

Ingredients Needed

  • 3 medium white onions
  • 1 garlic clove
  • 1 head butter lettuce
  • 2 sprigs fresh thyme
  • 1 each lemon
  • 1.5 quarts beef or vegetable stock (or water)
  • 2 ounces booze (for deglazing - sherry, vermouth, brandy, wine)
  • 2 ounces vegetable oil
  • 2 ounces honey
  • 2 ounces white wine vinegar
  • unsalted butter
  • 8 slices gruyere cheese
  • 4 ounces soft goat cheese
  • 4 ounces mayonnaise
  • 1 tablespoon granulated sugar
  • dried bay leaf
  • 4 ounces dried cherries
  • 2 teaspoons chia seeds
  • 1 tablespoon poppy seeds
  • pinch celery salt
  • sea salt
  • crushed red pepper
  • kosher salt
  • freshly ground black pepper
  • baguette (leftover is great, enough for 10 quarter-inch slices)

Cookware Needed: chef knife, serrated bread knife, cutting board, 2 - 3 quart heavy-bottomed saucepan, wooden spoon, whisk, ladle, 12-ounce oven-proof soup ramekins (4), baking sheet (2), parchment paper, small mixing bowl or 12-16 ounce jar with tight-fitting lid.

Serviceware Needed: plates (4), paper napkins or towels (4), bouillon spoons (4), salad bowls (4), forks (4)

Notes:

Students can choose to pick up a supply/ingredient kit from MCC for the cost of $20 (due at time of registration) or they may choose to purchase their own supplies. Students must provide their own kitchen equipment. Ingredient kits will be available for pick-up at the MCC Fort Omaha campus. Pick up and/or supply list information will be sent to students via email prior to the class start date. Must be 16 or older.

Students will utilize the Zoom conferencing application to complete this course. Zoom meeting invitations will be sent via email at least one day prior to the class start date. Students must provide a valid email address to receive the meeting invitation to enter the Zoom virtual classroom.
